Glen Brook offers a week-long Economics of Food seminar as part of its visiting schools program. Intended for middle or high school students, the program offers students the chance to learn and discuss such subjects as the 100-mile diet, the origins of meat, the grass-based farm cycle, and numerous other healthy foods.
During the week, students prepare all their own meals (under the supervision of our Culinary Director). The seminar teaches practical skills to students, equipping them with the tools to make wise decisions about food in our increasingly-complex economy.
